4 c. mashed potatoes (with no milk or butter)
1 c. milk
1 c. shredded cheddar
2/3 c. Swiss cheese, shredded
1/3 c. Parmesan cheese
1/3 c. minced green onion
1 small onion, chopped
1 1/4 tsp. salt
1/4 tsp. pepper
4 eggs, separated
Combine first 9 ingredients. beat yolks and stir into this. Beat whites until stiff peaks form. Gently fold in. Transfer to souffle dish coated with oil spray. Bake uncovered at 375 for 40-45 minutes until golden.
