    Does homemade tomato juice have to be canned?

    I was cutting up a tomato today and normally I squeeze the seeds and juice out of them, which got me to thinking that it would be fun to make my own tomato juice.

    My grandmother always canned her own and it was fun to help her, but is there a way to make it without preserving it in a jar? If so, (1) is it as good and (2) if not, what is the best method to use when canning it?

    I have 20 cups in the freezer. Hubby loves it. You can adjust to your taste. I use a little sugar to take the bitterness off and Hubby likes salt and pepper. Also a good base for tomato soup.

    My grandmother - a farmer's wife - canned her own tomato juice which was closer to a home made V8 juice made with celery and carrot juice. It could be consumed by itself or added to a soup or stew.
    Since it is a high acid vegetable, a quick water bath for about 10 minutes should seal everything without affecting the flavor.
