    Freezer Fill Up

    This time of year I tend to fill my freezer with premade dinners. Today I made chicken drum sticks two ways. First was floured, egged, and then rolled in special K crunched. The second was a dipped in oil and seasoned flour with garam masala, curry and turmeric. Baked at 425 for 35 minutes. Now I'll cool and freeze.Yield 12 of each kind
    I also cooked up 15 potatoes and mashed with cream cheese, parmesan, and cream. Plastic wrap into muffin tins with a pinch of paprika in the bottom and wrapped. When frozen I'll pop them into a freezer bag. yield 20 servings.
    Tomorrows project will be potato and cheese perogies ( Varenyky in Ukrainian as my late mother in law taught me) I use a very tender dough with a mashed potato and cream of tartar in it. I use a vacuum sealer and make packages just enough for the two of us. I don't care for any other of the fillings. Yield... a massive amount!
    I'm also going to make pork pot stickers. yield about 20.
    I also have 2 whole chickens I'll bread with panko and bake for oven fried chicken.
    Finally a chicken yogurt bake with turmeric and red peppers.

    Do you have any favourites that you make ahead? Some days when you don't feel like cooking or want to spend the time trying another recipe what do you do?

    I love the idea of mashed potatoes in muffin tins! What do you put your other meals in? Everything in freezer bags?

    I use a vacuum sealer. Great investment. Liquids I keep my yogurt containers. Seal with duct tape so they won't open and label with marker...date, item and instructions. I also use aluminum pie plates covered in double or heavy foil for cabbage rolls etc.

    I admire anyone who has enough sense to fill up their freezer this way! Maybe because I'm happily single I never got the hang of it, though it sure would come in handy sometimes.....much better to eat my own frozen food than something from a box!
