    Romano Chicken

    Making this tonight, it has great reviews, soooo......
    I'll post back with what we think.

    Romano Chicken

    1/2 c. cracker crumbs
    1/2 c. romano
    1 tea. salt (won't use)
    1/4 tea. each garlic powder, pepper
    1 chicken cut up (I'm using legs for dh~~breast for me)
    1/2 c. milk

    Mix first 5 ing. dip chicken in milk then in cracker mixture. Lay on baking sheet in single layer, bake at 350 for 1 to 1 1/4 hr.
    thinking maybe serve with parsley potatos, some sort of veggie.
    making the sugar cream pie I posted for dessert it is so so good.

    This is very very good. Def. a keeper. Very easy too I couldn't get romano so used the parm,asiago, romano blend in the plastic container. The chicken got a beautiful crispy brown, tender and juicy inside.

    I was wondering what kind of crackers you used--Ritz, Saltine, something else? Last Xmas some pecan crackers from a well known maker were served and I nearly ate them all, I was thinking of using them as a coating...

    I used saltines, and omitted the salt. I feel sure any cracker would work, switch it up alittle hope you like it as much as we did.

    I used to do something very similar, only the crackers were replaced by a combination of corn meal and flour, drizzled with butter and placed on a rack instead of directly on the pan. It worked just as well with pork chops or fish, too. Liked it so much that I kept a batch of it in the fridge to use at a moments notice...and of course I always added garlic powder, can't seem to use Parmesan without it!

    Hadn't thought about using it on other meats, that's a great idea. I will def. do that, and putting them on a rack is fantastic, they did kinda stick even on the silicone baking sheet. TY for the tips! I love knowing great cooks

    I got tired of things sticking and cleaning cookie sheets. It's parchment paper every time now.
