This is from a cookbook I got on clearance called "Potluck" I have always used the brown sugar, vinagar, topping for ham loaf. was never a fan. I tried this one recently and oh my, it is fantabulous.Really the best ham loaf I've ever had. Hope you like it if ya try it.
3 Tab. butter
1/3 cup brown sugar
Canned pineapple slices ( I used chunks cause that's what I had)
maraschino cherries (op, I didn't use)
1 lb. ground cooked ham
2/3 lb. freshly ground raw pork
2 cups bread crumbs
2 eggs, beaten
1 cup milk
1 tea. salt
1/8 tea. pepper
1/2 tea dry mustard (I just used a little squirt of reg. mustard)
Melt butter with brown sugar and place in bottom of 8x8x2 pan. Place layer of pineapple slices (with a cherry in the middle of each if desired) on top of sugar mixture. Mix remaining ingredients, and spread evenly on top of fruit. Bake at 350 for 1 1/2 hr. turn out onto platter, cut into squares, serves 6
**my notes** I melted the butter in a 11x7 baking dish, then put sugar and pineapple on the butter. (why mess up another pan???)
I formed the meat into a loaf shape. second time I made it I put the pineapple on top and basted with the sugar, butter. both worked fine
