Raw mushrooms become soggy upon being de-frosted, only cooked will do...

We have been successful in freezing Puff Ball, Meadow and ****gy Mane Mushrooms - by cooking them halfway in butter, spread on a cookie sheet to flash freeze then you can pack them tightly into whatever container or bags you use for freezing. These are all wild mushrooms and yes, they are safe to eat we do lots of research before we eat anything wild.

This year my husband discovered Pig's Ears Mushrooms - those I dried and so far they have been great in using in omelets, etc. You might want to check about drying store bought mushrooms. You can always try one or two and if it does not work you have not lost that much food.

I know that you can buy frozen mushrooms in the freezer section, but I think they have been cooked. I do dry the store mushrooms when they are on sale. I also wanted to mention that I also grind some of the dried mushrooms and put them in a jar (can also be frozen) to add flavor to soups and dips. It gives a great depth of flavor also without the chunkyness. I do the same thing with tomatoe skins when I pull them off after blanching.

Do you use a food dehydrator to do this?

I saw Jamie Oliver grind his dried mushrooms today and used them to make a crust on a beef roast. That would be good. It's his meals in 30 minutes show.
