    I hate when a cake comes out dry. It is the worst thing to me. Because of this very unwanted outcome, I always bake things a little less time than suggested, and keep a vigilant eye on it. Sorry you experienced that. Because they were baked in the smaller tins I believe this was the reason for the dryness. They baked faster in the smaller tins.

    So if a cake comes out too dry what do we do? Cut it horizontal and use a filling. Extra icing. Poke holes and let it absorb any liqueur? Ahh the perfect cake for a fondue? You tell me.....

    I did bake them only 35 minutes. They were not too dry to eat, just not the moist consistancy I thought they would be. Like I said, more like a pound cake. I gave two of them away and both friends liked them. I tried a couple of slices with ice cream on top Yum,Yum, and then one with some fresh fruit. Both were great. Plain was also very good and I will make again and maybe try for 30 min. But all in all I am not unhappy with the recipe. Thanks again just because I love peanut butter.

    A drier cake is perfect for making trifle, it can absorb flavors without becoming mushy overnight, big plus since "overnight" is the recommended way to make trifle...

    Which reminds me... I really need to buy a trifle dish. I think they make desserts look really beautiful!
