Have you checked out all of the threads in this forum? Your best advice might come from there.....
Didn't find a lot in the search. Try Google or extension service in your area.
If you don't want to can them, you could always make stuffed peppers! They are one of my favourite dinners.

Yum! That's a great idea! I think I figured out how to can them! I'll try it and post how if it works out!
