    jalapenos

    how can I perserve jalapenos for later use in recipes. Would freezing them work??

    I'm no expert by my guess is that freezing would be fine with a caveat. When they thaw, they will probably lose their texture. Sweet peppers certainly do, tomatoes, too. But the taste and heat should be just fine, I'd think. So, if you can stand the loss of texture by using them in things like sauces and stews and such, that should do it. Otherwise, you might try pickling them.

    I haven't tried it with jalapenos, but I've found that both serrano and habanero chiles freeze beautifully. As briarbowl said, they lose a little in the texture department, but the taste is great! (I'm still working my way through last year's serrano harvest!)
