1-2 chicken breast halves
2 tsp. Cajun seasoning
8 oz. smoked sausage, sliced
1 sm. onion, cut in thin wedges
2 green peppers, cut in strips
2 14 1/2 oz. no salt added stewed tomatoes
Cut chicken into bite-sized pieces, toss with Cajun seasoning, and place in skillet. Add sausage and cook til chicken begins to brown. Add onions and peppers. Cook 2 minutes. Add tomatoes. Cover and cook 10-15 minutes. Ladle into bowls into which you have added a few tablespoons of cooked rice.
