    Herb Crust

    This works well for chicken, fish, or pork....

    1/2 c. yellow corn meal
    1/4 c. AP flour
    2 T. Parmesan cheese
    1 1/2 t. Italian seasoning
    1/4 t. garlic salt
    1/4 t. black pepper
    milk
    melted butter


    Dip meat into milk, roll in mixture, place on rack and drizzle with butter.
    I usually add more Parmesan and garlic powder to the mix, but that's just me.....don't skip the butter, it adds crispiness to the crumbs!

    My mom often used a corn meal mixture for fish batter and I made it for awhile, too. Will have to try it again.

    I often use leftover cornbread to make crumbs for breading. It's a good use for it.
