    Spinach Quiche

    3 eggs, beaten
    1/4 tsp. salt
    1 c. shredded Swiss cheese
    1 8 oz. carton sour cream
    1 can crumbled onion rings
    1 pkg. frozen spinach, uncooked, drained

    Mix altogether and place in an unbaked dough pie shell, and bake at 325 for 1/2 hr. or until golden brown.

    Very appealing for many situations... lunch, brunch, dinner..... midnight hunger... this will satisfy!

    Back in the days when I first discovered quiche, I went on a rampage of experiments. People thought I was nuts when I made it with sour cream instead of cream...until they tasted it! Same reaction when I made French toast with vanilla ice cream and eggs--what's that old saying--the proof is in the pudding!!!
