    My Favorite Quiche

    Swiss Cheese Pie

    1- Either a) make a piecrust dough, or b) use 33 saltines rolled into crumbs & mixed with 6 Tb. melted butter. Then line pie dish with your chosen crust.

    2- Saute (but do not brown) 1 bunch green onions (chopped, tops included) in 4 Tb. butter.

    3- Spread cooked onions on top of crust in baking dish; then mix well and pour over them:

    2 eggs
    3/4 cup sour cream
    2½ cups grated Swiss cheese
    1/2 t. salt (I use Herbamare instead)
    dash white pepper or cayenne

    4- Sprinkle a little paprika over the top and bake at 350° for about 40 minutes, or until a knife inserted comes out clean.

    serves 4-6... But it's very very tasty, so it's best to make two pies.

    Reheats very well.

    Being a butter fiend, I do the saltine crust.

    This quiche sounds really excellent. I enjoy making quiche, and appreciate the recipe. I always add a little oregano to mine, plus a bit of minced onion. Not familiar with Herbamare. Is it similar to Lawry's Seasoning Salt or Tony Chachere's?

    Herbamare is a seasoned sea salt, but it's made by a unique process. Rather than simply mixing salt with the seasonings, they make an herb brine which is cured and then dried. In Herbamare every crystal has the complete flavor. Highly recommended- I use it much more often than I use plain salt.

    Usually available at health food stores. Made by A. Vogel, distributed in the States by Rapunzel.

    This sounds really addictive. I think it must be a really wonderful thing, and I wouldn't mind finding some of it. Thanks for the info!
