    Honey Mustard Mozzarella Chicken

    4 split boneless chicken breast halves
    3/4 c. honey
    1/2 c. mustard
    lemon pepper
    4 slices bacon, halved
    1 c. mozzarella cheese

    Place chicken in baking dish. Drizzle heavily with honey and mustard, mixed together. Sprinkle with lemon pepper. Bake at 375 until almost done, about 45 minutes, then lay bacon across the chicken. Continue baking until bacon is crisp, then cover with mozzarella and bake until cheese is melted. Serve with wild rice or potato wedges, and a beautiful, fresh green salad.

    This sounds SO tasty, I love honey mustard. I don't buy boneless breasts, so I do have a question--does it really take that long for them to cook? Seems like a long time...

    boneless takes longer because it has no fat it takes time to tenderize and the bone in will intensify the heat and cook faster. I usually buy boneless skinless on sale. Even though it's easy to debone I just don't like doing it.

    Now I remember what I was thinking of--when I used them at my last job it was in a convection oven, much faster...

    Honey mustard, bacon, and cheese.......hmmmmm.......... what's not to love? Throw in some cheddar and tomato with caramelized onions and I may just pass out!!!
