Can't believe I did this. But I did. I left out the cumin and the oregano. So if any of you poor people are actually trying to USE the above recipe, I sure hope you're reading this far. Yes. Two teaspoons of cumin and one of oregano. Right in there with the chili powder after the onions and garlic are fried. It's true, this has started out to be a bad week, but there's no reason you should suffer for it. I do apologize.
Most experienced cooks will figure it out on their own, don't lose sleep over it, it's still a good recipe.....

Most of us adjust recipes to our own taste anyway.
I have a similar recipe for white chili, which I love, except I use the dry beans, cook it for three hours in about 7 or 8 cups of chicken broth and use two or three cans of chopped green chiles. I think it is much more elegant than the traditional "bowl of red," whether you use tomatoes or not. Sometimes a serve it with little bowls of grated Monterey Jack, sour cream, salsa, fresh cilantro,etc. and sometimes I just serve it "as is". I think it does take some getting used to, though, because it is so completely different from red chili. After preparing it this way for about 15 years, I actually prefer it to the original, but my husband still greatly prefers the red. I think most men do.
