    Smile Easy, Healthy, Satisfying Budget Meal

    Casserole of Chicken, Rice & Cabbage

    Ingredients:

    1 large cabbage [cut into pieces]
    1 can tomatoes chopped up
    2 cans tomato soup
    1 lb. chicken parts
    4 cups cooked rice
    season with italian seasoning 1 tsp.
    salt and pepper to taste

    Directions:

    1. Brown chicken in oil.

    2. Mix rice, one can tomato soup, chicken, and seasoning together.

    3. Cut up cabbage into small chunks. Save a few leaves for the top of the casserole

    4. Put the can of tomatoes in the casserole, add 1/2 the cabbage, then a layer of the rice mix (1/2). Then another layer of cabbage, and then the last of the rice mix.

    5. Mix the other can of tomato soup with water and pour into the casserole. Then top with cabbage leaves.

    6. Bake for 2 hours in oven at 350 F.

    The cooked rice doesn't turn out mushy after two hours in the oven? I'll have to remember that.....

    Actually, no, it's wrong, and I've asked to have it taken out.

    Try the rice uncooked. maybe adjust liquids

    That's the direction we're heading in, just need to figure out the liquid....

    You're quite right, the rice should be uncooked and the baking time reduced to one hour. One cup of uncooked rice, and another can of tomato soup, I think. I don't know what I was thinking.

    I used to make simple chicken and rice for the kids. Drumsticks, mushroom soup and MINUTE rice. 45 minutes or less. Can't remember the amounts tho. Tried regular rice once. It was a fiasco. Throws the cooking time way off. Then you have to add chicken way after starting time.
