Rinse and dry your choice of chicken parts. Heat a large skillet over meduim heat and add 2 or 3 tablespoons of vegetable oil. Brown chicken parts throughly, turning as needed, remove to a plate.
To hot skillet and drippings add;
2 or 3 meduim to large onions, meduim slice. Saute until translucent and there is some carmelization.
Then add;
1 cup ketchup
1/3 cup packed brown sugar
1 cup water
salt and pepper
1 Tablespoon Worchestershire Sauce
1 1/2 teaspoons dry mustard
Mix well and bring to a simmer. Place chicken parts in onion sauce, arrange to cover chicken. Lower heat to simmer and cover, cooking about 1 hour. Check occasionally, adding more water or ketchup to keep chicken moist, and sauct Serve with baked potato using sauce on potatoes. At my house we like a lot of sauce so I sometmes double the recipe. Add some corn or Blue Lake Green Beans for a comfort food supper. Enjoy!
