    Talking Food So Bad It's Good

    I've been reading Consumer Reports too long. You know, eating all those healthy things and avoiding the nasty stuff (or at least trying to). And then recipes come along that remind me of Days Gone By and just how delicious gastronomic sin can be! The following is an appetizer recipe containing untold quantities of evil things which I recall only too well and intend to make next week (caution being flung to the winds at rocket speed) not as an appetizer but as an entire dinner! Maybe with french fries (and a chocolate shake).

    Rumaki

    12 tbsp. soy sauce
    4 tbsp. brown sugar
    1 4" piece fresh ginger, peeled and finely chopped
    16 chicken livers, cut into thirds
    12 water chestnuts, quartered
    1 lb. bacon, each strip cut into thirds


    1. Whisk together soy sauce, brown sugar, and ginger in a small bowl. Add chicken livers and water chestnuts and toss to coat; place in refrigerator to let marinate for 1 hour.

    2. Heat oven to 425°. Strain liver and chestnuts, reserving the marinade. Pour marinade into a 1-quart saucepan and bring to a boil over high heat; set aside.

    3. Place 1 piece of bacon on a cutting board, then top with 1 piece of liver and 1 water chestnut. Wrap bacon around liver and chestnut; skewer bacon in place with a toothpick. Repeat process with remaining livers, water chestnuts, and bacon. Transfer rumaki to a foil-lined sheet tray and bake, basting occasionally with the marinade, until bacon is golden brown, about 25 minutes.

    Yes, that's my speed - not the brie and jalapeno, just the cream cheese/pepperoni/crescent rolls!

    I've made stuffed chicken breasts with a similar ingredient list, so yummy I was asked to put it out as a daily special at work.....
