    Thumbs up A Zillion Deviled Eggs Right Here

    I'm kind of taken aback that deviled eggs haven't been placed in a prominent position here in the egg forum. No one seems to have raised the issue. No one's posted any recipes. But deviled eggs, why they're about as lascivious and delicious as any other form of egg and they leave so much more to creativity when compared with boiled, fried or scrambled! If you haven't served 'em to guests, they're the kind of dish you offer with drinks and turn aside to sneeze ('Chew!) and when you turn back to your people the eggs have entirely disappeared! Let's have four or five dozen different recipes posted here just to give people a flavor of what can be done!

    Traditional (My Tradition, Maybe Not Your Tradition) Southern Deviled Eggs:

    Ingredients:
    • 7 large eggs, hard boiled and peeled
    • 1/4 cup mayonnaise
    • 1 1/2 tablespoons sweet pickle relish
    • 1 teaspoon prepared mustard
    • Salt and pepper, for taste
    • Paprika, for garnishing
    • Sweet gherkin pickles sliced, for garnishing
    • Pimentos, for garnishing
    Directions

    Halve 7 eggs lengthwise. Remove yolks and place in a small bowl.

    Mash yolks with a fork and stir in mayonnaise, pickle relish, and mustard. Add salt and pepper, to taste.

    Fill egg whites evenly with yolk mixture. Garnish with paprika, pickles and pimentos. Store covered in refrigerator.

    Simple wasn't it? Bet you'll just scarf down the first few dozen or so you make while you're trying out the recipe!

    Deviled eggs are always a hit. I have a special plate that I serve mine in. It has rounded indents for the egg to sit on and two circles in the middle for salt and pepper shakers.
    My neighbour had a BBQ and she prepared them from her chickens. She made over 2 dozen. 50 people invited, I was half way through the line only to watch the empty place go back to the kitchen! Not fair.This year I think I'll make my own. I might share.

    Cajun Deviled Eggs:

    Ingredients:

    6 eggs
    2 tablespoons mayonnaise
    1 teaspoon prepared Dijon-style mustard
    1/2 teaspoon salt
    1/2 teaspoon ground black pepper
    1/2 teaspoon ground cayenne pepper

    Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool and peel.

    Slice eggs in half lengthwise. Remove yolks and place in a medium bowl. Set aside egg whites. Mashing with a fork, mix mayonnaise, Dijon-style mustard, salt and black pepper with the egg yolks.

    Insert mix into the whites of egg, decorate with pimento or paprika or pickle slices. Serve.

    Spicy Deviled Eggs

    Ingredients:
    Directions:
    Place the eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat. Cover and remove from heat. Set aside for 15 minutes.

    Drain the pan and fill with cold water, eggs still in it. Peel the eggs when cool enough to handle.

    Cut the eggs in half lengthwise and scoop out the yolks. Mix the yolks with the other ingredients. Spoon the mixture into the whites and serve.

    Sooo right! I should have made plain that I was talking about a thread dealing with the deviling in the eggs rather than hard boiled egg problems, which have been covered here wonderfully well! That is Step 1. This here's Step 2 (after you've ironed out the hard-boiled egg problems).

    Oprah Winfrey’s Deviled Eggs

    Ingredients:

    12 large eggs
    3 tablespoons mayonnaise
    2 tablespoons mustard
    1 tablespoon minced sweet pickle
    1 dash Worcestershire sauce
    salt & fresh ground pepper
    1 dash lemon juice
    1 dash horseradish sauce
    1 -2 dash Tabasco sauce
    2 tablespoons chopped parsley
    2 tablespoons paprika (garnish)

    Directions:

    1 Hard boil eggs.
    2 Cut each in half lengthwise.
    3 Remove yolks and place in bowl with all other ingredients; mix well.
    4 Spoon into egg whites and sprinkle with parsley & paprika.
    5 Cover and refrigerate at least one hour or more.
    6 Serve chilled.

    Lovely recipes for those devilishly delicious deviled eggs. The first recipe is the one I was taught to make by my mother, and the others are wonderful, too. I will be sure to try them all. I like the Cajun recipe a lot!
