Thread: Cuban Fried Rice

    Cuban Fried Rice

    1 can pineapple tid bits, drained
    1 tbsp. oil or olive oil
    3 c. cooked rice
    1 can chunk ham, chopped
    1 c. bell pepper, chopped
    1 jalapeno pepper, chopped (or 1/2 c. chilies)
    1/2 15 oz. can black beans
    lime wedges

    Heat pineapple in oil. Add ham and peppers to skillet. Add beans and rice. Cook until heated thoroughly. Serve with lime wedges.

    A dish that can transport you to tropical locales and balmy breezes.

    This recipe is also very quick to make which is a plus on hot, lazy days.

    Finally a fried rice that doesn't include scrambled eggs! This sounds like something I could get behind, maybe a little cilantro in the mix, too....

    Love cilantro. I tried to find some seeds the other day so I could grow my own, but couldn't find any. I love growing it in a container on the patio. It smells wonderful after the rain.....they say this was one of the fragrances you could smell at the Hanging Gardens of Babylon.

    This looks yummy! I love fried rice and my husband likes anything with pineapple....I'll have to give it try. :-)

    Brigid you couldn't find cilantro because that is the ground leaf. You need to look for coriander seeds. And yes it is a nice patio plant. good idea.

    I know that cilantro is coriander. Still couldn't find it. But I appreciate your kind words! One never knows if someone else is aware of all the different names used to refer to a certain plant, so thank you for mentioning that! I have been growing it for years, but for some reason it is scarce at the moment.

    Brigid, I wonder if you took the whole coriander seeds that we can get in the spice section and tried to plant them. It is just a thought. I hardly ever see the seed packets, but I do have whole coriander in my spice cabinet. It is too late in the season for me to try it here, but you may be able to do it in the south. Maybe I am crazy, but it just popped into my head.

    online seed catalog stores....stokes,burpees etc. some times they have store outlets. check with the local garden clubs. Maybe someone will give you a cluster of theirs.
