Some commercial marinades are so intense that 15-30 minutes is fine. I make Good Seasons dressing and do mine overnight--what are you using?
I recently marinated some chuck eye steaks, and as it turned out I didn't get around to grilling them for two days. They were strongly flavored (the marinade this time was soya, oil, garlic, ginger and parsley) but still very palatable.
My all-time favorite soy based marinade is this one:
½ cup soy sauce
2½ Tb brown sugar
2 Tb lemon juice
1 Tb ground ginger and
½ t. garlic salt

1/4 cup fresh lime juice
1/4 cup maple syrup
2 Tbsp ketchup
2 Tbsp olive oil
2 Tbsp soy sauce
4 cloves garlic -- finely chopped
1 tsp red pepper flakes -- crushed (or leas for less spicy version-
could use ½ t. cayenne & ½ t. smoked paprika)
1/2 tsp ground black pepper
1/2 tsp grated lime rind
1/2 tsp salt
In a medium-sized bowl, whisk together all ingredients for sauce. (Makes about 1 cup.) Pour over beef (a tri-tip or beef cubes for kebobs) and let marinate in fridge for 1-4 hours or overnight.

from the Dean and Deluca cookbook--debone chicken thighs and marinate in a mixture of Hoisin sauce, a whole lot of chopped fresh ginger, some garlic, some soy sauce, some sugar, some water. Marinate overnight if possible and broil.

Orange-Thyme Marinade
1/2 cup cider vinegar
1/3 cup frozen orange juice concentrate
1/4 cup light soy sauce
1/4 cup vegetable oil
4 cloves garlic, minced
1 tablespoon grated orange rind
1 tablespoon dried thyme
Dash cayenne pepper
2 tablespoons sliced green onions
Combine ingredients in a glass bowl and mix thoroughly.
Marinade is used for pork, chicken or shrimp.
Reserve remaining marinade for basting.

Soy Sauce, Honey, Toasted Sesame Seed Oil
Just those three ingredients in equal proportions make a deep, richly flavored marinade for chicken or pork. The longer you leave it, the stronger the flavor. If baking, line pan with sprayed foil for much easier cleanup--the honey becomes soldered to the pan otherwise. If grilling use indirect heat or the same thing will happen. This is also very good on shrimp, but only marinate them briefly or the flavors overwhelm the shrimp. Maybe even just use it as a glaze for shrimp, instead. I find the sesame seed oil a bit strong for me so I usually cut that amount in half. You'll figure out which way you prefer it!

Chicken Barbecue Marinade
1 egg
1 cup vegetable oil
1 pint vinegar
1 teaspoon fresh garlic, minced or 1/2 teaspoon granulated
1 tablespoon poultry seasoning
2 tablespoons salt (or use Good Seasons Italian from packet)
1 teaspoon pepper, freshly ground
This may seem like too much seasoning but remember that its a marinade and most of it is going to be discarded. I like foods spicy so this suits me, but you might want to adjust to your preference.
Beat eggs, add oil and beat again. Add remaining ingredients and beat again. Reserve a few tablespoon for brushing over the chicken when grilling in a small jar in the fridge.
Marinate chicken parts in this mixture in a zipper bag for up to 24 hours before grilling. Just before removing the cooked chicken pieces from the grill, brush the chicken on both sides with the reserved marinade.
This chicken is good served either hot or cold.
