    Mint Chocolate Chip Cupcakes?

    Does anyone know of a recipe for mint chocolate chip cupcakes using girl scout thin mints?

    My curiousity was piqued when I was watching DC Cupcakes one day and they considered doing this type of cupcake for a project they were asked to do. Ever since then, I have been on the hunt for a recipe and have not found one.

    im thinking just a simple cake mix, add some sugar, vanilla, and the cookie pieces. Chocolate icing? Im not sure cream cheese would go so well so well with mint flavor.

    Who said anything about cream cheese frosting? Are you planning to make the cupcakes chocolate? The thin mints might just melt away, I can't say for sure because I've never used them. Check your grocers baking aisle first to see what they have...I'd bake a sheet cake and then sprinkle the chopped thin mints on top as a glaze, popping it back into the oven for them to melt. That's just me, though...

    This is the recipe i was looking at after doing a search for mint chocolate cupcakes. m not so crazy about cupcakes with cream cheese filling.


    1 pkg. (8 oz.) cream cheese
    1 egg
    1 1/3 c. sugar
    1/8 tsp. plus 1/2 tsp. salt
    1 c. chocolate pieces mint
    1 1/2 c. flour
    1/4 c. cocoa
    1 c. water
    1/3 c. oil
    1 tbsp. vinegar
    1 tsp. vanilla
    1 tsp. baking soda



    TOPPING:


    1/2 c. sugar
    1/4 c. nuts (mix together)



    In small bowl combine cream cheese, egg, 1/2 cup of sugar and 1/8 teaspoon salt. ix until creamy. Stir in chocolate pieces. Set aside. In medium bowl combine flour, remaining 1 c. sugar, cocoa, 1/2 teaspoon salt, water, oil, vinegar, vanilla and baking soda. Beat. Insert 18 paper liners. Fill each 1/2 full with flour mixture. Drop 1 heaping teaspoon cream cheese mixture on top. Sprinkle with topping. Bake 350 degrees for 30 minutes.

    I don't know what I was thinking of before, thin mints are cookies, not candies, right? So how could they possibly melt? Your recipe sounds good. Maybe use vanilla frosting with crumbled cookies sprinkled on top for taste and texture, or chocolate frosting. If you don't like cream cheese simply omit it, it won't hurt anything...

    I googled "girl scout thin mint cookies in a cupcake recipe" I got 29,800 hits. Seems to be popular. Some recipes have whole cookie and some have crushed.Lots of various ideas.

    You can always make plain chocolate frosting and add a little peppermint flavoring. It works perfectly!
