Thread: Oven Omelet

    Oven Omelet

    8 eggs, beaten
    1/4 cup finely chopped onion
    1 c. milk 2 c. shredded, frozen hash browns
    1 c. diced ham
    1 c. shredded cheese
    salt to taste
    pepper to taste

    Lightly grease an 8 in. glass baking dish. Beat eggs, stir in milk. Stir in potatoes, ham, onion, and cheese. Season and pour into prepared pan. Bake in preheated 375 degree oven for 45-50 minutes until knife inserted in center comes out clean.

    This is really nice with hot, buttered, sourdough bread toast, and your choice of jam or jelly, along with a cold glass of pineapple juice and the everpresent coffee.

    You're right, brigid, this IS really nice with sourdough bread toast! (We used mild cheddar as the cheese.) But we had seltzer and cranberry juice instead of pineapple juice, which would have been delicious but we didn't have it around.

    I am so glad you enjoyed it. It's good for all times of day or night. I have never been one to discriminate against dishes that are traditional for a certain time of day. I will use make pancakes at midnight if I wish!
