Thread: Taco Meatloaf

    Taco Meatloaf

    1 1/2 lb. ground beef
    1 c. corn chips, crushed
    1/2 c. salsa or taco sauce
    1 tbsp. taco seasoning
    1 egg, beaten
    1 c. cheddar cheese, shredded

    Mix all ingredients with hands. Shape into an oval shape and place in a loaf pan. Bake at 350 for 1 hr. Drain off fat, and bake 5 more minutes.

    Serve with mashed potatoes and a green salad with fresh, chilled tomato chunks. Chocolate mousse would be a great dessert for this dinner.

    That's the thing that makes it great! The ease of making something most anyone would love, and it is comfort food after a long day of looking forward to getting home. It makes home a sweet place indeed!

    If the salsa was emitted, would it be just as good? My boyfriend doesn't care for whole tomatoes. Usually he doesn't mind tomato sauce though. In that case i could probably just use the taco sauce.

    Just run the salsa through a blender, processor, or food mill--no more chunks...

    Are you talking about the corn chips we regularly use to dip into salsa, like Tostitos for instance, or corn chips like Fritos?

    Corn chips like Fritos, but I don't see why you couldn't use any chips you love.

    Like any good recipe this one looks pretty easy to customize to your taste. Sub any nacho or tostido chip for the corn chips. There are many different salsas, of different make ups and degrees of heat. Same with the cheese. I mite chop up some onions and peppers. For sure I would leave out the taco seasoning, since I have never met one I liked. LOL. Maybe serve with a geniune real fresh fruit salsa. YUM!!!

    I can see using it to make soft shell taco sandwiches or on soft flat breads of all types.
    Leftovers crumbled and mixed with cheese whiz or verlvetta would make a great hot dip too.
