1 c. butter (two sticks)
8 oz. cream cheese, softened
2 c. sugar
1/4 tsp. salt
1 tsp. vanilla
4 eggs, room temp.
3 c. self-rising flour
1 c. chopped strawberries
Cream butter, cream cheese, and sugar. Add salt, vanilla, and beat well. Add eggs, one at a time, and mix well after each addition. Stir in flour. Gradually add berries. Spoon into two buttered and floured loaf pans. (9x5) Bake at 325 for 1-1/2 hrs. or until cake begins pulling away from sides of the pan. Watch carefully. You do not want to overbake. Place on cooling racks for 10 minutes, then gently turn out on plates to continue cooling. When completely cool, glaze with a sugar glaze.
This is a pretty spring time cake that is sure to please!
