Can you buy brown rice in large quantities? At my local wal-mart it's only in a 2 pound box. I'm looking for something like a 5lb bag.

Try a Price-Rite or Shop-Rite if they are in your area, otherwise I guess it's a big box store.....

Hey, TomatoMustard, are you really going to use that much real soon? Brown rice doesn't keep all that well. Six months tops, and in the fridge, too.

I guess I didn't think about it like that. I only use it once every couple weeks; I just figured it would be cheaper to buy in bulk like I do white rice.

White rice, yes; brown rice, no. The oils in the brown rice go pretty soon.

Not to get off the subject of rice being a cheap meal extender, I often use steamed rice as a bed for stir-fries and Chinese. Beef or pork fried rice is another good meal extender and is great for leftover rice. But I wanted to mention that pasta (even cold, leftover pasta that I toss in olive oil and store in a ziploc in the fridge) can be used as a cheap meal extender, too, and makes a good base to top off with stir-fries, like pepper steak and mushrooms over pasta (or rice), sausages and peppers, etc.

Pasta and/or rice make soups and stews go farther the next day, too!

I just read a while back that white rice is one of processed foods and is a pure starch, which is part of the process of increasing glucose levels. Just thought I would put that out there. I eat a lot of rice myself, white, brown and wild rice, which I understand is not really a rice at all. Anyhow, I am not sure if a lot of rice would be good for you if you are diabetic. I like the grain Ferro, (very healthy) and bulger wheat also. They cook up easy and can be used hot or cold.

Wild rice is actually a grass! Your hi GI is white, short grain, Japanese. Best is brown, and brown basmati, okay is white basmati.
