1 lg. onion, chopped
1 c. chopped celery
2 cloves garlic, chopped
1 tbsp. butter
3 chicken breasts, cut up
1 can whole tomatoes, undrained
1 can chopped, green chilies, undrained
1/2 tsp. chili powder
1/2 tsp. cumin
Saute onion, celery, and garlic til tender in butter. Add chicken. Brown on all sides. Stir in remaining ingredients. Cover and simmer 30 minutes until chicken is tender.
Wonderful for nights when you want something a little different. Rice, salad, and cornbread would complete this dinner. A dessert of fresh fruit would be a lovely ending. Perfect for an outside on the patio dinner.
