    Aunt Bee's Mayberry Cookbook

    If you like everyday cooking with a fun little twist, try this cookbook. It is filled with quips from the Andy Griffith television series, info about the characters, photos, and lots of the best recipes for everyday Southern cooking. A really fun cookbook!

    Here is a sample recipe.

    Barney's Salt and Pepper Steak

    1 1/2 lbs. sirloin steak
    1/2 c. oil
    1 green pepper, chopped
    1/2 tsp. salt
    1/4 tsp. pepper
    3 tbsp. all-purpose flour
    1 c. water
    3 tbsp. soy sauce
    Cooked rice

    Cut the steak into very thin slices. In a skillet with a lid heat the oil and add the steak slices. Cook uncovered until browned. Pour out some of the oil, and add remaining ingredients except the rice. Stir. Cover and cook for 30-35 minutes, until the juice has thickened. Stir. Serve over rice.

    sounds interesting! :-) I've never heard of it. The recipe looks delicious too.

    Here is another!

    Thelma Lou's Cashew Fudge

    1/2 c. butter or margarine
    1 c. packed light brown sugar
    1/4 c. milk
    1 3/4-2 c. sifted confectioners sugar
    1 cup broken cashews

    Grease a 9 in. sq. pan. In a saucepan, melt butter and add brown sugar. Cook over low heat for 2 minutes, stirring constantly. Add the milk and continue cooking, stirring until the mixture boils. Remove from heat and allow to cool. Gradually add confectioners sugar until the mixture is almost of fudge consistency. Then stir in the nuts, spread in the prepared pan and cool.

    I might need to make this very soon, I love nuts of all kinds but am especially crazy for cashews!

    There is an episode from the show where Barney talks about how he has a date with Thelma Lou every Tuesday night, and they sit on the couch "watching that doctor show" with a pan of this fudge between them. It is good, too! It is like cashew pralines. Delicious beyond delicious!

    Here's another! Perfect with spaghetti!

    Herbed Garlic Bread

    1/2 c. butter
    1/2 tsp. thyme
    1/2 tsp. rosemary
    1/2 tsp. oregano
    1/2 tsp. basil
    1 large loaf French bread
    4 cloves garlic, finely minced
    Grated Parmesan cheese
    Fresh minced parsley

    In a small saucepan combine the butter, thyme, rosemary, oregano, and basil. Heat over low heat until the butter is melted. Slice the bread and generously brush the butter mixture on each slice. Sprinkle with minced garlic, Parmesan cheese, and parsley. Bake in a 475 degree oven, or under the broiler until lightly browned.
