    James Beard Theory and practise of good cooking

    Just started to read this incredible book. Chef Beard is clear and exact about how to cook. The book is divided into cooking procedures like boiling, braising, roasting etc. He doesn't hesitate to make his opinion heard. For example. It is not a soft cooked or hard cooked egg your not cooking it, your boiling it. It's a soft boiled or hard boiled egg.... Sounds like it's a pet peeve!

    James Beard, a true master at the art. What a magnificent learning experience to follow his footsteps around in the kitchen. It is a neverending maze of delights, and his expertise will take you anywhere you want to go. Board his plane and take off on a trip of endless adventures in our favorite place... the kitchen!
