Here is a recipe from the book that is a particular favorite of mine.
Breakfast Scones
2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
3 tbsp. sugar
1/3 c. butter or margarine
1/2 c. sour cream
1 egg, slightly beaten
2/3 c. currants, optional
2 tsp. milk
1 tbsp. sugar
Strawberry butter
Combine first 3 ingred. in a med. bowl. Stir well. Cut in butter until crumbly. Add sour cream and egg, stirring just until dry ingred. are moistened. Stir in currants, if desired. Turn dough out onto a lightly floured surface, and knead lightly 4 or 5 times. Pat dough into an 8 in. circle on a greased baking sheet. Brush top with milk; sprinkle with 1 tbsp. sugar. Cut into 8 wedges, and separate wedges slightly. Bake at 400 for 14-16 minutes or until lightly browned. Serve scones warm with Strawberry butter.
Strawberry Butter:
1/2 c. butter, softened
2 1/2 tbsp. strawberry preserves
Stir these two ingred. together until creamy, and serve with scones. Makes 1/2 c.
Here is another.
SPICY CHICKEN STRIPS
8 skinned and boned chicken breast halves
3/4 c. all pur. flour
1 1/2 tsp. chili powder
3/4 tsp. salt
1/2 tsp. garlic powder
1/4 tsp. cumin
1/4 tsp. pepper
1 lg. egg, lightly beaten
1/2 c. water
vegetable oil
Cut chicken into long strips. Combine flour and next 5 ingred. Stir well. Stir in egg and water. Dip chicken in batter. Fry strips in hot oil til golden brown. Drain on paper towels.
Tomato Garlic Dip
1/3 c. mayonnaise
1/4 c. sour cream
1/4 c. tomato sauce
1/4 tsp. cumin
1/4 tsp. chili powder
1/4 hot sauce
2 cloves crushed garlic
1 6 oz. can tomato paste
Combine all and stir well. Makes 1 1/2 c.
