Thread: Quick Shepherd's Pie

    Quick Shepherd's Pie

    3/4 lb. hamburger
    1 can Veg-All
    1 can cream of mushroom or celery soup
    1/2 tsp basil
    garlic powder to taste
    1/2 c. milk

    Make 2 c. of instant mashed potatoes
    1 c. shredded cheddar

    Brown hamburger, drain well. Place in casserole dish. Pour soup in, plus vegetables. Stir, and add basil and garlic powder. Add a half cup of milk. Stir well. Spoon the potatoes over the top, spread it out to the edges, and place it in a preheated 375 degree oven. Bake it for 30 minutes, then take it out of the oven, sprinkle with the cheese and return to oven until well melted, about 10 minutes.

    This is easy and a delight on a winter day. Have garlic bread sticks or hot, buttered biscuits on the side and wait for all the smiles around the table!

    Here's another handy way to make shepherd's pie: make a meal of mashed potatoes, hamburger gravy, and meatloaf, and just make extra so you have enough leftovers to use as a shepherd's pie the next day. Layer in dish: meatloaf, gravy, mashed potatoes, cooked corn, bake for 30-40 min. at 350. Or skip the corn (or add somewhere else in the layers) and top with cheese. Sounds a little strange to do it with meatloaf, but it actually gives it a delicious flavor. You'd never know it was leftovers!

    I've done this with leftover meatloaf before, as well as whirling it through the processor and adding it to chili--both worked wonderfully well, and saved me from endless meatloaf sandwiches!

    Meatloaf sandwiches aren't too bad. I like to make them on sour dough bread with a little sharp cheddar, wrap them in foil and heat them in the oven. Pretty good! I like that idea of adding it to chili, though. That will be on my list of things to try!
