Thread: Chewy Raisin Oatmeal Cookies

    Chewy Raisin Oatmeal Cookies

    Have tried the following recipe and it has me puzzled.

    Combine in saucepa: 3/4 c. raisins, 1/4 c. water, 1 tsp. vanilla, 1/2 c. shortening.

    Heat only until shortening is melted. Remove from heat.

    Add: 1/4 tsp. salt, 1/2 tsp. baking soda, 1 tsp. cinnamon.

    Stir together. Add 1 1/2 cups oatmeal. Drop by teaspoon on greased cookie sheet. Cool on rack immediately. Bake 10 - 12 minutes at 350 degrees.

    COMMENTS:
    1. This recipe printed out on 01-25-2005 and have just tried to make these cookies.
    2. There is no binder.

    Oatmeal Drop Cookies

    1/2 c. shortening
    1 1/4 c. sugar
    2 eggs
    1/3 c. molasses
    1 3/4 c. flour
    1 t. baking soda
    1 t. salt
    1 t. cinnamon
    2 c. rolled oats
    1/2 c. chopped nuts
    1 c. raisins

    I once tried to make cookies without flour-the recipe called for no flour.....They did not turn out but they made a great cookie dough cake!

    I saw a recipe for a flourless, chocolate torte once, but never tried to make it. I thought it looked like it wouldn't work, and I hated to waste the ingredients.

    I used to make them at work, very dense and rich, if that's what you're looking for. Can't imagine eating very much of one, though...I have no problems with gluten so I stick with the standards and I'm happy...never been known to refuse chocolate truffles though!!!

    Yeah I have not problems with gluten also......though I have a recipe fo rice flour muffins! They are good!

    The oatmeal is in there instead of using flour as a binder.
