Thai Green Chicken Curry
this dish is one of the most popular and tasty of any Thai recipes. My partner is the person who developed this recipe to what it is today. I hope you enjoy this dish as much as I do.

Ingredients
Chicken Thighs 500g
Canola Oil 2 tbls
Fresh Chilli chopped
Minced Garlic 3 cloves
Fresh Coriander 1 cup shredded
Kaffir Lime 3 leaves
Fish Sauce 2 tbls
Green Curry Paste 2 tbls
Green Peas 1/2 cup
palm sugar 1 tbls
Coconut Milk 2 tins (try the low fat homemade coconut milk)
Broccoli 1 medium cut into small portions
Capsicum 1 medium cut into strips
Method
Remove excess fat from chicken, cut into thin strips.
Heat Oil in Wok, add curry paste, chilli and garlic and fry till fragrant, then add a small amount of coconut milk. Turn down the heat to medium/low then put the rest of the milk, sugar and the Kaffir lime leaves (slightly bruise them first), bring to a light simmer and reduce.
Add chicken to the milk mixture cook for 5 mins.
Add peas, capsicum and broccoli and cook until tender.
Add fish sauce and coriander, stir through then serve immediately.
Serve with steamed jasmine rice and garnish with fresh sprigs of coriander.
