I got this recipe out of a magazine and it is heavenly!

Potato and Apple Soup
2 tsp. butter
2 tsp. olive oil
1 onion, roughly chopped
1 apple, peeled, cored, and roughly chopped (Empire, McIntosh, or Spartan)
1 clove garlic, finely chopped
500 g potato (about 2 large) peeled and cubed (any variety will do)
3 cups chicken stock
1 cup sweet apple cider
Salt and pepper
Sauteed diced apples to garnish (Empire, McIntosh, or Spartan)
Grated extra-old cheddar to garnish

1. Heat butter and oil together in a large pot on medium-high heat until butter is melted. Add onion, apple and garlic and cook, stirring occasionally, until golden brown and slightly caramelized, about 10 minutes.

2.Add potatoes, stock, and apple cider and bring to a boil. Reduce heat and simmer, covered, until potatoes are tender, about20 minutes.

3. Puree soup with an immersion blender, or in batches in a food processor until smooth.
When I make it, though, I like to puree some of it and keep a bit of potato still in chunks. It works either way. Then add salt and peeper to taste.

Serve garnished with grated cheddar and lots of sauteed apples. Delicious!
