    Berry Crisp

    Berry Crisp
    8 cups frozen berries or other fresh or frozen fruit
    2 tbsp orange juice, or the juice of 1 lemon
    2 tbsp apple juice concentrate
    powdered ginger and cinnamon to taste
    pinch of black pepper
    3 cups prepared granola (recipe for Sugar Free Granola)

    Preheat oven to 375* F. Toss berries with lemon or orange juice, apple juice, and spices and place in 13 x 9 x 2 inch pan. Top with granola and bake for 25 minutes. Let cool slightly, and serve with beverage of your choice.

    Serves 8.

    I am diabetic and this is an interesting looking recipe. I especially like the sugar free granola part. I will try it sometime. Always on the look out for healthy but tasty foods that are diabetic friendly.
