ROSEMARY CHICKPEA SOUP
Saute a chopped onion in olive oil until golden. Add a can of chickpeas and season with fresh rosemary, salt,and pepper. Mash some of the chickpeas and add water for the consistency you like. Simmer for 15 minutes. Drizzle with olive oil and top with freshly grated Parmesan cheese.
