PUMPKIN WITH CHORIZO
Brown diced Chorizo or other Sausage in 2 tbsp of Olive Oil. Remove from pan and sauté chopped onion and celery. ( About 1/2 c. each) Add 2 peeled and diced Apples and cook for a few mins. Season with salt, pepper cinnamon and nutmeg. Stir in a 16 oz. can of Pumpkin and chicken stock to thin it somewhat. Let simmer 30 mins and then add Chorizo.
