    Hi, Brigid, I just got Morgan Freeman's book about Caribbean cooking. I haven't had enough time to look at it as thoroughly as I would like, but it is just a beautiful book. I, too, am interested in the historical aspect of recipes, and love to try new dishes and cooking techniques.

    It is called "Morgan Freeman and Friends: Caribbean Cooking for a Cause." It is a beautiful book.

    I have not tried all the recipes in it , but as of yet, my favourite is :


    DARK AND DANGEROUS TRIPLE CHOCOLATE COOKIES
    from THE COMPLETE CANADIAN LIVING BAKING BOOK

    These intensely chocolaty cookies are just the thing when you want a chocolate fix. Team the up with your favorite beverage of choice:milk, tea, chai, or cappuccino.

    1 cup butter
    1 cup granulated sugar
    1/2 cup packed brown sugar
    2 eggs
    1 tsp vanilla 2 cups all-purpose flour
    1/2 cup cocoa powder
    1 tsp baking soda
    1/4 tsp salt 1 cup semi-sweet chocolate chips
    1 cup white or milk chocolate chips

    1. Line 2 rimless baking sheets with parchment paper or grease, set aside.

    2. In a large bowl, beat together butter and granulated and brown sugars until fluffy,
    Beat in eggs, one at a time; beat in vanilla. In separate bowl, sift or whisk together flour, cocoa, baking powder, and salt.Stir into butter mixture in 2 additions. Stir in semisweet and white chocolate chips.

    3. Drop by heaping tablespoons about 2 inches apart, onto prepared baking sheets.

    4. Bake in top and bottom thirds of 350*F (180*C) oven, rotating and switching pans halfway through, until firm to the touch and no longer glossy, about 12 minutes.

    Makes about 48 cookies.

    I get mine at Yard Sales!! They are the greatest place to get good cookbooks!

    Dark and Dangerous cookies! I bet they really are. You could probably make yourself before you wanted to stop eating the. Ha! Don't put too many on the plate to tempt anyone!
