This is a recipe I picked up from The Martha's Vineyard Cookbook, it's heavenly on a smoked turkey sandwich.....
TEA LANE CHUTNEY
2 lbs. apples
1 1/2 pints vinegar
2 lbs. dark brown sugar
1 lb. raisins or chopped dates
2 fat cloves minced garlic or 1 small finely chopped onion
4 oz. minced candied ginger
1 1/2 t. dry mustard
1 t. salt
1/2 to 1 T. crushed red pepper flakes
Peel, core, and quarter apples. Cook them in vinegar until soft. Add all other ingredients, using only the smaller amount of pepper flakes to begin. Bring to boil and cook over medium heat 10 minutes.
Taste and gradually add more pepper flakes if desired. Cook another 15 minutes, stirring occasionally.
Pour into hot, sterilized containers and seal. Process in hot water bath, 10 minutes for pints, 15 minutes for quarts. Makes about 8 standard jelly jars.
I'm guessing this could also be portioned and frozen. Yummy!
