Thread: Salmon Mustardello

    Salmon Mustardello

    A few years ago, a new restaurant in our hometown in North Georgia opened and served an entree called, "Salmon Mustardello." It was a beautifully cooked salmon entree featuring a wonderful "mustardello" sauce. To our great surprise and dismay, the restaurant closed and we have not been able to duplicate the recipe. The owner/chef was originally from Peru and the menu specialized in Italian dishes. I have been searching the web trying to find this dish but I think it might have been a chef's creation at this restaurant. Any help would be greatly appreciated - this was a hit with a number of people in our family!

    Hi, KarenB! Thank you for your reply. The restaurant was a "mom and pop" type place and (to the best of my knowledge) was the only location. The chef/owner was quite talented and I know that he had restaurants in the past (in New York, I think). I believe he moved out of our area to be closer to family so I am guessing that he has opened a new place wherever he is now. I have been searching the internet and cookbooks since he closed and have found some things that are close but not quite right..... It was a beautiful presentation; the fillet was served on a bed of angel hair pasta and the cream sauce was drizzled over the whole dish. It was finished with fresh tomato (finely diced) and wisps of fresh basil. I am going to look through the recipes you sent and get in the kitchen. Thanks again!

    Here's a recipe that sounds similar.

    SALMON STEAK WITH MUSTARD SAUCE (Dijon)
    Printed from COOKS.COM
    4 sm. salmon steaks, 3/4" thick
    1/4 c. sour cream
    3 tbsp. Dijon mustard
    2 tsp. lemon juice
    2 tbsp. melted butter
    1 clove minced garlic
    1/4 tsp. dry dillweed


    Combine 5 ingredients less butter and mix well. Brush steaks with melted butter. Broil or bake until salmon is opaque and flakes easily with a fork and is lightly browned and tender. Do not overcook. Spoon sauce over salmon and serve.

    This is half the fun of cooking...reinventing a recipe. It may not be the same but it could be close. You may even get it better for your taste.

    KarenB, you are spot on! I went off to the market and then took to the kitchen. I played around with it a bit, but my hubby smiled when he saw the plate. We think that I got it quite close, and, even if it wasn't exact, we liked it so much that we are sparring over the leftovers. Thank you for your advice!

    Thanks CM this looks good. I'm not a big fish fan but if it gets drowned in a good sauce I'll dig in.

    K. Slink, I must concur! And Karen B., my hubby is not terribly fond of fish either, but he does love the mustard flavour of this dish. Once I grilled the salmon, I put it on a bed of angel hair pasta and drizzled the sauce over the fish. It was finished it off with a basil chiffonade and a sprinkling of petite diced Roma tomatoes. (That was the Chef's presentation at the restaurant and it really made for a beautiful dish!) I think I am going to try it this weekend with chicken breasts (for the family members that do not like fish at all). If I pound them quite thin and pan sear them, I think they will be very good with the sauce and pasta.
