If, like a lot of people, he just doesn't like the texture, you could make white sauce & add dried mushrooms that you pulverize into dust. If he really doesn't like mushroom flavor, you could use just white sauce or cream of celery, cream of chicken, ect., but you won't get that taste. Adding some beef bouillon, worchestershire or soy sauce will give you some of the "umami" flavor, which is the savory flavor that is a part of mushroom's taste. These have a lot of salt, so you might not need to add as much or any, salt to the dish.
Have you tried different varieties of mushrooms for your soups? Maybe he would like some of the more exotic strains.
I have always used white Sauce!
I am not a big lover of any kind of mushroom product either!

An extra-thick white sauce using broth and milk to approximate the density of canned condensed soup. The recipe is not originally my own, but I foolishly failed to record the source.
You might try it using lightly sauteed shallots or leeks; they generally combine well with a wide variety of other tastes. But I wouldn't cook them very long, or they'll begin to sweeten up.
A few splashes of Maggi seasoning is another great source of umami! It's similar to soya sauce in consistency and saltiness, but different in flavor. To my taste, it has a sort of dimensionality to it that soya and Worcestershire don't possess. I'm a big fan of the stuff.

This sauce can be used as a substitute for CONDENSED Cream of Mushroom Soup.
* Time 10 minutes
Ingredients
* 1 tbsp. butter
* 3 tbsp. flour
* 1/2 cup any broth (I prefer Morga broth, but beef or chicken bouillon works fine)
* 1/2 cup milk (I use 2% 'cause it's what I keep in the fridge)
* mushrooms, or other vegetable, chopped and sauteed (how ever much you desire)
* salt and pepper to taste
How to make it
* Melt butter in a saucepan over Med-Low heat.
* Stir in flour a little at a time until smooth, then remove from heat.
* Add broth and milk a little at a time, stirring to keep mixture smooth. Then, stir in mushrooms or vegetable of choice.
* Return to heat and bring sauce to a gentle boil; stir constantly until sauce thickens.
* Add salt and pepper to taste.
You can use Cream of Celery soup. I bet he would like that better. It's really good, too.
Why not just remove the mushrooms? It shouldn't be too difficult. Or maybe it is the texture he does not like. You could try putting the soup in the processor for a bit so the mushrooms are chopped so small they will be hard to detect. My Grandson HATES "smushrooms" but he LOVES lasagna. So I just chop the mushrooms real fine (minced) and the flavor is still there....he is none the wiser, just can't let him see me doing it. LOL.

I agree with Laurie Lee. It shouldn't be too difficult to remove the mushrooms. Besides, from what I've observed these days of mushroom pieces in a can of soup, it looks like the soupmakers use just ONE mushroom cap per can and chop it up.
After opening up the can of soup, empty it out, stir it well to "unmold" it, and then press it through a strainer or sieve.
As a last resort, don't let the boyfriend see the empty soup can. Sort of like cooking for a teenager who swears he/she "doesn't like onions/mushrooms/cabbage" etc. (insert the word of your choice)

Some years back a friend gave me a bottle of mushroom soy sauce, it was delicious. I think the brand name was "House of Tsang" , it was shaped pretty much like Lea & Perrins and had a black label with white (and maybe some red) printing on it. I was skeptical at first but became a believer after the first taste. If you can find it I think you'll be happy with the results...
