It's really quite simple to do. Simply pour the beaten eggs into a greased skillet that is pretty warm but not hot, and sprinkle however much cheese you like over one half of it. Then flip the other side over the cheese so it looks like a half moon, and cover it for about a minute or even less. Flip it over again for a second or two and then slide it onto your plate. It's not as hard as it looks. Remember not to cook it over TOO much heat. Eggs don't like a really hot skillet.
