A favorite gazpacho recipe
one large bottle of v-8 juice
one large green, bell pepper, diced
2 cucumbers, diced
one large can diced tomatoes or 3 cups diced fresh tomatoes
one diced onion
4 tablespoons extra virgin olive oil
texas pete to taste---i use quite a bit, about 1/2 cup
do not put through blender.
store in a covered container or pitcher.
Chill and serve with a dollop of sour cream.
Healthy (except maybe the sour cream) and addictive.
