    Processing canned pickled beets

    I just made my first batch of pickled beets per recipe , cooked at 30 min @11 lb, when I opened up the canner the jars looked like they were filled with caramel apples? And a brown sauce .
    Anyone know what happened?

    Hi Chery,

    It sounds like you processed pickled beets in a pressure canner when you should have done them in a boiling water bath instead. If you can beets in plain water, then you should use a pressure canner, but there is a difference in the amount of headspace called for between pressure canned (plain) beets or beets canned in a vinegar/salt/sugar solution (pickled beets).

    For pressure canning, process beets packed in water for 30 minutes (pints) 35 minutes (quarts) at 10 lbs leaving 1-inch headspace (the air space at the top of the jar). The headspace is important - leaving too little headspace in pressure canning can force liquid out of the jars and cause improper processing.

    To process pickled beets, leave 1/4-inch headspace and process in a boiling water bath for 30 minutes.
