    Salmon and Rice Casserole

    Salmon and Rice Casserole

    2 tablespoons margarine or butter, soft
    4 tablespoons flour
    1/2 teaspoon salt
    1 1/4 cups low-fat milk
    1/2 teaspoon curry powder
    1/2 teaspoon Worcestershire sauce
    7 1/2 ounces canned salmon
    1 1/2 cups rice -- cooked (leftovers will work)
    1 cup cheddar cheese -- grated

    Set oven at 350 degrees F. Grease casserole dish.

    Melt margarine. Add flour and salt and cook for 1 min. while stirring. Remove from heat. Add milk gradually, then return to heat. Cook, stirring, until thickened.

    Stir in curry powder and Worcestershire sauce. Break salmon into chunks (remove bones) and add to sauce. Add cooked rice to mixture. Pour into greased casserole dish.

    Sprinkle cheese on top. Cover with aluminum foil.

    Bake at 350F for 30 minutes.
