1/4 cup minced onion
2 tablespoons light olive oil
2 teaspoons flour
1 tablespoon sugar
2 1/2 teaspoons sea salt
dash freshly ground pepper
1/3 cup vinegar
1/3 cup water
5 cups sliced cooked potatoes
1 tablespoon finely chopped green pepper
1 tablespoon finely chopped pimento pepper
1 tablespoon chopped dill pickle
1 tablespoon minced parsley
1/2 to 3/4 teaspoon celery seed

Saute 1/4 cup of minced onion in oil until tender. Combine flour, sugar, salt and pepper. Slowly add vinegar and water and mix well. Add to the cooked onion and simmer until slightly thickened. Add the remaining ingredients and toss until well coated with dressing.

Serve hot or cold.
