    Blueberry Bran muffins

    Does anyone have a good recipe for Blueberry Bran muffins?
    I have one but for some reason they do not rise!
    Is it my recipe or me??

    Hi Cassie-Jane,

    What recipe are you using? Here's one with bran cereal and blueberries. These are not too sweet but you can adjust sugar.

    1 cup bran cereal
    1 cup milk
    1 egg, lightly beaten
    3 tablespoons sugar
    2 tablespoons melted butter
    1 cup dried blueberries
    1 cup (sifted) all purpose flour
    4 teaspoons baking powder
    1/2 teaspoons salt

    Soak bran and blueberries in milk for 5 minutes. Add lightly beaten egg and butter. Sift together flour, baking powder, salt. Add to mixture, stirring only enough to moisten.

    Fill greased muffin tins 2/3 full and bake at 400F for 20-25 minutes (or just til done). Makes 12-15 muffins.

    I use the one from the Kelloggs site!
    It actully is the Country bran one but my friend told me instead of rasins use blueberries!
    It always turns out for her!

    this recipe was on cooks.com:
    HEALTHY BLUEBERRY WALNUT BRAN MUFFINS 1 cup egg substitute (or real eggs)
    1 cup buttermilk
    8 oz unsweetened applesauce
    1 1/2 cups bran cereal
    1 1/2 cups oatmeal
    2 cups unbleached all purpose flour
    3 1/2 tsp. baking powder
    1/4 tsp. salt
    1/2 tsp. baking soda
    1/2 tsp. cinnamon
    1 tbsp. cocoa powder
    4 tbsp. vegetable oil
    2 cups frozen wild blueberries
    1 cup walnuts
    canola spray (for muffin pan)

    Combine the following in a large bowl: egg, buttermilk, bran, oatmeal, applesauce and honey. Allow to sit for 15 minutes, then beat.Combine the following in a medium bowl: flour, baking powder, baking soda, salt, cinnamon, cocoa powder and oil.
    Mix the dry ingredient mixture into the large bowl. Beat with hand mixer until smooth. Stir in blueberries and walnuts.
    Spray muffin pan with canola spray and fill with batter.
    Bake at 400°F for 20-25 minutes.
    Yields approximately 18 medium sized muffins.
