    Orange and lemon pulp are good to add to marinades, too! Speaking of salad dressings, if you've made a salad and are about to toss the dressing at the bottom of the bowl, recycle it as a meat or seafood marinade. You can add a little more vinegar, lemon juice, soy sauce, garlic, oil, etc if it needs it.

    I am glad to hear I'm not the only one who saves or reuses "scraps".....most family and friends think I'm a little nuts

    Waste not, want not, right? The Frugal Gourmet first got me started on saving scraps for soup making. One of my favorites is the dark green part of the leek, adds tremendous flavor to any soup. Don't have any today but I do have leftover stalks from fresh fennel that I'll incorporate into chicken soup, should be interesting...

    I have heard somewhere that Fennel is a meat substitute???
    TO me this sounded really strange because I always thought it was a herb.....
    Anyone heard of this??

    Fennel is a bulb, to be eaten raw or cooked. Fennel seed is a spice, used greatly in Italian cooking. Sometimes chopped fennel frond from the bulb can be used as you would fresh dill (which it looks very much like). It has a mild anise flavor, which it is sometimes sold as, depending on what market you are in. I've never heard of it as a meat substitute, but I can see where its rich flavor when cooked could be incorporated into a meatless recipe...

    Super idea about the veggies and potato skins! Now as to the orange peelings and such, throw them in medium sized pot. Cover with water. Add cinnamon nutmeg and cloves. As much as you like. (Add some apple peelings too if you like) Bring to a boil then reduce heat to simmer. Keep adding water and spices to keep pot from drying out and simmer all day.

    Your home will smell wonderful! Like you have been baking all day!
    Better than using commercial air fresheners for people with breathing issues. No perfume-y smell.
    Also, it will humidify your home and help relieve dry noses and itchy eyes.

    Now for one of the best parts. The moisture gets into lots of cracks and crevices where you cannot get at to clean. This will. AND it will clean the areas instead of covering up the smells like commercial sprays because of the oil. (I learned this tip once when I was selling my home and had a smoker in the house previously. After doing this daily for a few weeks, you could not smell the smoke! Leave your closet doors open when you do. Great for "airing" out musty foot odors as well.

    Now how long does it last? I don't know! My house sold and I moved on! LOL Give it a try. The least that will happen is you will have a beautiful smelling home. Use oranges, lemons, limes and even grapefruit. Some dried cranberries or cherries in the pot helps too.

    I used an old pot that I didn't use much for cooking. When the day was through, I put the cooled pot in the freezer and used it for another day. Added some more peelings and spice and you are ready to go.

    I've used this method frequently in the past when the house was getting stuffy and old smelling, it works wonderfully well!
