    Homemade Granola

    I want to make some homemade granola, but my daughter is allergic to any and all wheat and dairy products. Many of the recipes call for "wheat germ"....... can this be elimated from the recipe ??????

    You can leave out the wheat germ - it's only added as a nutritional booster, but you can make up for this by using seeds and nuts as a replacement.

    Here's a recipe I found on another site that I love. I mad a few changes from the original and can't seem to keep it in the house. There is no wheat germ in it.

    • 1 cup pecans,walnuts or other nut of your choice
    • 4 cups old-fashioned rolled oats
    • 1/4 cup seeds such as sesami, flax, sunflower, pumkin or other of your choice
    • 1/2 stick unsalted butter
    • 1/3 cup pure maple syrup, cane syrup, agave nector or honey, at room temperature
    • 1/4 teaspoon fine salt
    • 1 cup dried fruit such as apples, pineapple apricot, berries, craisons or raisons
    • 1 large egg white



    Preheat the oven to 375°F. Line a large shallow baking sheet with foil. Spread the nuts on the sheet and roast for 8 to 10 minutes, until lightly toasted. Transfer the nuts to a board, let cool and chop the nuts. Set aside.
    Reduce the oven temperature to 300°F. Pour the oats and seeds, in a mound on the same baking sheet. Melt the butter in a small bowl in the microwave; stir in the maple syrup and salt and egg white and drizzle on top of the oats. Stir well with a rubber spatula, use hands to make clumps and then spread out the oats in an even layer.
    Bake the oats for 30 minutes, stirring once with the spatula halfway through, until the oats are lightly colored. Let cool; the mixture will crisp as it cools. Add the fruit and reserved nuts and toss.



    There are probably hundreds of combos you can make but don't do what I did the first time out and throw just about all options together. The result was not good. lol

    This sounds terrific.....One problem.....my Daughter cannot have any form of EGGS either !!!!!!! I may make this for the rest of my family though. Thank you so very, very much !!
