If you want something to coat for frying try instant potato flakes. I recently had green chili fries this way yum yum!
Or try corn bread crumbs. The box corn bread mix like Jiffy brand has wheat flour in it, as do most corn bread recipes. Here's one that doesn't though.
2 Cups buttermilk
1 Cup masa harina
3/4 Cup corn meal
2 eggs
2 Tablespoons melted butter
1 Tablespoon honey or sugar
1 teaspoon baking powder
1 teaspoon baking soda
combine all ingredients just until blended then bake in greased 10" cast iron skillet or 8X8 baking dish at 425 degrees for 20 -25 min. (After cooling crumble for soft bread crumbs or toast in a slow oven for dry crumbs. Thoroughly dry crumbs can be stored in an airtight container or ziplock for weeks.)
Masa Harina is usually found in the Mexican Food aisle & is used to make tortillas. Be aware that masa & corn meal, like oatmeal may be cross contaminated with gluten by facilities that also process wheat & other grains. If you have a health food store, food co-op or organic market nearby they can help you pick gluten free grains & wheat flour substitutes.
I have used ground almonds on fish and chicken to replace the breadcrumbs. It has a nice flavor, browns nicely and also has the crunch.
